Duck eggs with a difference!

你喜欢鸭蛋吗 Duck eggs with a difference! Our TY Chinese students and some brave teachers sampled a popular Chinese dish, pidan on Friday. Pidan or century eggs are made by processing duck, chicken or quail eggs in a mixture of clay, ash, salt, quicklime, and rice hulls for several weeks to several months. Through the process, the yolk becomes a dark green to grey color, with a creamy consistency and strong flavor due to the hydrogen sulfide and ammonia present, while the white becomes a dark brown, translucent jelly with a salty flavor. This chemical process breaks down some of the complex, flavorless proteins and fats, which produces a variety of smaller flavorful compounds.

Well done to our C4 and P4 hikers, they completed a 5.5km hike on the Fairy Castle loop in Ticknock on Wednesday. Some photos attached from our resting points. Please see some notices for the week ahead. 1. On Wednesday B4 and L4 will be going on a Hike. The girls will attend their first 2 classes as normal and then must meet in St. Joesphs hall at 10:26 and we will be back by the end of the school day, 13:40. Students should wear their school tracksuit and suitable walking shoes. Waterproof layers are encouraged if you have them. We will be walking in Ticknock, which the majority of it is paths but there may be puddles, rain, etc. Students also must wear their school coat. Students are asked to bring a small bottle of water which they will carry during the Hike. Due to the walk being a loop, we will not have the opportunity to retrace our steps if something is lost. Also when on the trip students bags will be stored in St. Josephs hall. It is strongly encouraged that all valuables are left at home on Wednesday. C4 will be moving their allocated break time room to Lourdes on Wednesday. 2. All students will be partaking in their mid year progress interview starting Monday. The schedule, rubric and questions are posted on the google classroom so all students are capable of preparing their questions and receive full marks for their interview. This is to check your daughters engagement and involvement in the year so far and to check her own views of her progress also. If your daughter is unable to make her allocated slot she must email Ms. Phillips prior to 08:30 on the morning of her interview to make alternative arrangement.s. Only re-arrangements from the student themselves will be accepted, no parents, friends, etc can rearrange on their behalf. 3. Group 1 and group 3 from the St. James' project must arrange to meet Ms. Phillips at their earliest convenience. 4. Students are starting their third science module next week. Class allocations are posted on the google classroom.
